History

The brief history of

Federation of Chinese Cuisine of Canada

 

The World Chinese Cuisine Association invited Ms. Sofia Ching, the sole owner of one of the most famous Northern Chinese cuisine eateries in Toronto, to Beijing in 1995. She joined the World Chinese Cuisine Association as the only representative of the Federation of Chinese Cuisine of Canada.  Ms. Ching was elected to the position of Vice-President during the Annual General Meeting. She was also appointed as liaison to the North America Associates. Ms. Ching continues to hold that position and participates in matters of revising the constitution, membership fees, organizing cooking competitions, etc.  She has traveled to member countries including Korea, Japan, Taiwan, Malaysia and Singapore in her capacity as VP.

 

The Federation of Chinese Cuisine of Canada (FCCC) have members in the Chinese food industry (e.g. food servers, wine experts, cooks and chefs), academia (e.g. tourism professors), and journalism (e.g. food writers, food magazine publishers, media personnel, and food critics). Membership in FCCC is by invitation only and is commonly considered to be prestigious.

 

The FCCC has entered into Chinese food competitions in Shanghai (1996) and Japan (2000). On both occasions, Ms. Ching was the inspirational leader of the mission to achieve recognition at a world class level. The teams received Silver and Bronze medals during the competitions. The secretary for the FCCC is Mr. Bill Wong, who has been a Chinese cuisine professor at George Brown College for 19 years.  Mr. Wong was appointed as one of ten judges during the 2000 competition in Japan. 

 

This tour is being organized for the 4th time by Mr. Bill Wong and Ms. Sofia Ching. The first occasion was in 1985, when 98 people participated in the tour under the banner of the Ontario Restaurant Association. The second tour in 1987 was under the banner of George Brown College, where 40 people participated and was billed as a Chinese Food Education & Sampling Tour. The 3rd tour was in 2002 with 165 people filled 4 bus load to theSilk Road”.  

 

We, the FCCC, are not trying to duplicate the previous tours but to explore the areas and foods that other people may hesitate to try. We have the cooperation from the World Association of Chinese Cuisine to arrange the banquets for our tour group. Ms Sofia Ching and Mr. Bill Wong will be with everyone throughout the trip; there will also be two guides at all times (one English-speaking and the other Chinese-speaking).

 

This is the 5th tour and combined with the participation of the 6th World Chinese Cuisine competition.
